Directions
Cook the Rice (10 minutes):
1️⃣ Bring a medium pot of salted water to a boil. Stir in the rice and cook until just done, about 10 minutes. Drain the rice and set aside to cool.
Sauté the Mushrooms (10 minutes):
2️⃣ Heat 1 tablespoon of the cooking oil in a large nonstick frying pan or wok over moderately high heat. Add half of the mushrooms and cook, stirring frequently, until tender and golden, about 5 minutes. Transfer to a plate. 3️⃣ Repeat with the remaining mushrooms and another tablespoon of oil, then transfer them to the plate as well.
Prepare the Aromatics & Rice (5 minutes):
4️⃣ In the same pan, heat the remaining tablespoon of cooking oil over moderate heat. Add the red-pepper flakes, grated ginger, and scallions, and cook for about 30 seconds until fragrant. 5️⃣ Increase the heat to moderately high and add the cooked rice, salt, and soy sauce. Stir well and cook for about 2 minutes.
Combine & Serve (5 minutes):
6️⃣ Add the peas and sautéed mushrooms to the rice, stirring frequently until everything is heated through, about 1-2 minutes. 7️⃣ Remove the pan from the heat and stir in the sesame oil. 8️⃣ Serve immediately, garnished with extra scallions or sesame seeds if desired.
